    Meatloaf Minis

    I receive the Kraft food & family magazine and I tried a new recipe out last night that appeared in the 'food & family simple shortcuts' magazine that came last week. It was a hit with the whole family, so I thought I would post it here in case you are like me and are always looking for quick and yummy dinner ideas for the family.



    Ingredients:
    1 lb. extra lean ground beef
    1 pkg (6 oz.) stuffing mix
    1 tsp. garlic powder
    3/4 cup barbecue sauce
    3/4 cup shredded cheese

    Heat oven to 375. Mix meat, stuffing mix, 1 cup water and garlic powder. Press into 12 muffin cups sprayed with cooking spray. Make an indention in the center of each mini loaf with a spoon; fill with barbecue sauce. Bake for 30 min. or until cooked through (160 F). Top with cheese; bake for 5 min. or more or until cheese melts. Serves 6.

    It was YUMMY and will be enjoyed many, many times at the Messmer household. And both Jayson and I agree, it would be a great recipe to make for an OSU football Saturday gathering, since it's easy to double if need be.

    Side Note: I am on the hunt for other quick, yet yummy recipe ideas. I'm stuck in a rut and want to continue to introduce new recipes into the mix. I'd love to hear any recipes you and your family love.
